Blueberry muffins are an absolute favorite of mine. There is no better way I can recall starting a morning than waking up to the smell of Dad's coffee brewing and the aroma of whatever delicacy Mom had baking in the oven.
Now that I'm a little older, I've come to the sad realization that toasting Eggos isn't making breakfast. Truthfully though, I hadn't ever imagined being capable of creating anything close to the breakfasts I remember having when I still lived at home. I never even dreamed that I would be able to bake like Mom, so I never tried.
Now heading straight for adulthood, I've become more aware of what I'm putting in my body. While muffins aren't at the top of the nutrition chart, there is a definite benefit to making your sweet treats at home rather than gorging down Little Debbie's and then wondering, "why I keep doing this to myself."
So I decided to give it a whirl! I didn't know what was going to happen, but I can say I wasn't necessarily expecting success. Best decision EVER. I still cannot believe how simple it was to make something so delicious!
One of Glade Link Farm's Favorite Recipes is for their Blueberry Muffins. And once you try them for yourself, you'll see why. I never thought I would be able to bake something that reminded me so much of home. And so much easier than I could ever imagine!
Here's what you'll need:
- 1 egg
- 1/2 cup milk
- 1/4 cup cooking oil
- 1.5 cup flour
- 1/2 cup sugar
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1 cup blueberries
& this here is what you'll do with it:
- Beat egg slightly with fork; stir in milk and oil.
- Sift together and add flour, sugar, baking powder, and salt.
- Add blueberries!
- Stir just until flour is moistened. Batter should be lumpy.
- Fill greased muffin cups. Bake at 400º for 20 minutes.
Voila! Blueberry Muffins that will bring you right back home!
